WP Flight as an organization we have been working on Elementor for the past 3 years and here is a little information on How to Use Global Fonts in Elementor? To add a global font style click on the add style button. Write Permissions: All right You can choose any of the global styles you want from here.

Yes, this has also been tripping me up.

So, when we change the typography settings via the Global Settings panel, the two will change as they use the same global font. I used the caching plugin Cache Enabler (https://wordpress.org/plugins/cache-enabler/) and can get these global styles to "stick" on the frontend.
